This traditional Malaysian snack is a crowd favorite and will have your guests raving. To start, gather your ingredients. You will need spring roll wrappers, vegetable oil, brown sugar, crushed peanuts, and water. Begin by mixing the brown sugar and crushed peanuts together. Set aside for later. Next, take one spring roll wrapper and brush it lightly with water. Fold the wrapper in half, then brush the top with more water. Roll the wrapper into a tight tube shape, similar to a Vietnamese spring roll. Make sure to seal the edges with water to prevent the popia simpul from opening during frying. Once all of your popia simpul are rolled, heat up vegetable oil in a frying pan over medium heat. Once hot, add your popia simpul to the pan and fry until golden brown. Take care not to overcrowd the pan, as this will result in uneven cooking. Once the popia simpul are fried, remove them from the pan and let them cool. Once cool, dust them with your brown sugar and peanut mixture. Make sure to coat the popia simpul evenly for maximum flavor. Serve your popia simpul on a platter with a sweet chili dipping sauce.
